Die Fideuá ist ein typisches Gericht der valencianischen Küche. Sie ist eine Variante der Paella de Mariscos (Meeresfrüchte-Paella), bei der man anstatt Reis Nudeln verwendet.
Der Ursprung dieses Gerichtes wird dem Ort Gandía zugesprochen, und die Legende besagt, dass diese Art der Paella erfunden wurde, weil ein paar Fischer auf hoher See gerne Paella machen wollten, statt Reis aber nur Nudeln zur Hand hatten.
